Here's what you should know:
There's more to the Apple Watch than just its series. In fact, if you're planning on purchasing the latest one, there are various finishes and sizes that should be kept in mind. The Apple Watch spreads over six generations and doesn't have an appellation per se. With Series 6, Apple has also introduced great colours, apart from hardware upgrades. Both the finishes (matte aluminium, stainless steel) are available in any of the two variants (40mm, 44mm). However, it's not the size but the finish that often perplexes users, and there's a good reason why!

Stainless steel
Pros: Well, for one, it looks great! But with the stainless steel option, you have the option of having a sapphire crystal display -- making it very difficult for the scratches to get your screen. You also get a stainless steel magnetic puck along with this model, which is a premium, and a far better alternative than the plastic puck for your matte aluminium watch. Despite the micro-abrasions, your Apple Watch in stainless steel is still a more durable option in general.
Cons: Apart from being the costlier option, the stainless steel version is also a more flashier alternative. The glossy finish and the built ends up causing the device to weigh a little more than the aluminium version. However, that's not the only issue with this alternative! Be prepared to embrace micro-abrasions and scratches as they're easily visible on the stainless steel body. You may also have to carry a soft cloth if you (like us) despise fingerprints on your devices.
Matte aluminium
Pros: If you prefer a more light-weight gear on your wrist, the aluminium finish is your best bet. Ideal for those who indulge in several outdoor activities, having this watch fit snugly on your wrist helps. Matte aluminium also means your device will successfully disguise tiny abrasions and minor scratches that you encounter while roughing it out. Apart from that, there are more colours (which look a lot better) available for the matte aluminium finish. And yes, this version doesn't come with a steep price tag -- so that's a definite win.
Cons: The aluminium finish gets you the Ion-X strengthened glass instead of the sapphire crystal display. While sturdy in itself, not as unyielding when you compare it with the stainless steel alternative. For this version, Apple gives you a plastic magnetic charging puck which is not durable -- and may end up giving you a hard time when snapping it onto the back of your watch.
